Spinach & Zucchini Soup

Ingredients

Scale
  • 1 large onion or two small ones diced
  • 2 cloves of garlic minced
  • 3 tablespoons olive oil
  • 3 pounds of zucchini peeled and sliced
  • 6 oz of fresh baby spinach
  • Salt to taste

Instructions

  1. Saute onions onions until translucent on a medium flame
  2. Add minced garlic and saute until fragrant, about 30 seconds
  3. Add sliced zucchini and water just to cover the zucchini
  4. Add salt
  5. Cook for ½ hour on medium to low flame until vegetables are soft
  6. Remove from flame
  7. Puree until smooth using an immersion blender
  8. Add spinach and return to flame just until spinach is wilted
