- ¾ cups bacon bits cooked
- 7 large eggs
- 1 cup cottage cheese
- 1 cup Colby jack cheese shredded
- ¼ tsp salt
- ¼ tsp black pepper pepper
- cooking oil spray
Instructions

Preheat oven to 325℉.

In a medium sized mixing bowl, crack and whisk eggs.

Add in bacon, cottage cheese, shredded cheese, salt, and pepper. Mix to combine.

Spray a 12 cup muffin pan with cooking oil.

Equally distribute the egg mixture among the 12 muffin cups.

Place a pan of water on the lower rack of the oven.

Place the egg bites in the upper rack of the oven and bake 23-25 minutes.

Use a toothpick to check for doneness. Toothpick should come out of the egg bite clean.

Let the egg bites cool for a couple of minutes. Remove egg bites from the muffin pan before they completely cool.
