- Apple Pie Filling:
- 3 – 4 large apples peeled, cored, and diced (Gala or Granny Smith)
- ¼ cup brown sugar
- 1 tsp cinnamon
- 1 tsp nutmeg
- ½ tsp allspice
- 1 tbsp cornstarch
- ¼ cup apple juice
- Tortilla Wrap:
- 8–10 small flour tortillas
- 2 tbsp melted butter
- ¼ cup brown sugar
- ¼ cup granulated sugar
- ½ tsp cinnamon
- Toppings:
- caramel sauce
- whipped cream
- ice cream
Instructions
- Peel and chop the apples into small pieces, then toss them into a pan along with the apple juice, brown sugar, spices, and cornstarch. Simmer over medium heat for 10-15 minutes, stirring regularly. When thickened, remove the pan from the heat and let it cool.

- While the apple pie filling cooks, preheat your oven to 350°F. Combine sugars and cinnamon Then, make the cinnamon sugar mixture in a bowl and set aside.

- Next, warm the tortillas so they’re pliable. I do this by wrapping them in a damp paper towel and placing them in the microwave for 30 seconds.
- 8-10 small flour tortillas

Fill each tortilla with a scoop of apple pie filling and roll the tortilla up. Place each apple pie roll seam side down on a parchment paper-lined cookie sheet or baking dish.

In a small bowl melt the butter in microwave for 30 seconds. Brush the rolled taquitos with the melted butter and put them in the preheated oven for about 15 minutes, or until crispy and golden brown.2 tbsp melted butter

Apply more butter, then roll each taquito in the cinnamon sugar mixture to coat it completely.
